- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin

- 1 cup pomegranate juice
- 1 cup pomegranate seeds (arils)
- 2 tablespoons honey
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, cumin, and smoked paprika on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet. Sear for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Pour in pomegranate juice and bring to a simmer, scraping the bottom of the skillet to release any browned bits.
- Stir in honey and let the mixture simmer for about 5 minutes until slightly thickened.
- Place the chicken back into the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Sprinkle the pomegranate seeds over the chicken and sauce, ensuring they are evenly distributed.
- Remove from heat, garnish with chopped parsley, and serve warm.
