  • 1 cup pomegranate juice
  • 1 cup pomegranate seeds (arils)
  • 2 tablespoons honey
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, cumin, and smoked paprika on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet. Sear for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes.
  5. Stir in minced garlic and cook for another minute until fragrant.
  6. Pour in pomegranate juice and bring to a simmer, scraping the bottom of the skillet to release any browned bits.
  7. Stir in honey and let the mixture simmer for about 5 minutes until slightly thickened.
  8. Place the chicken back into the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  9. Sprinkle the pomegranate seeds over the chicken and sauce, ensuring they are evenly distributed.
  10. Remove from heat, garnish with chopped parsley, and serve warm.
