A hearty and flavorful vegetarian lasagna layered with fresh vegetables and cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cups marinara sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain.
- Mix ricotta cheese with spinach, basil, oregano, salt, and pepper in a bowl.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Layer three noodles over the sauce, followed by half of the ricotta mixture, half of the zucchini, half of the bell pepper, and one cup of mozzarella cheese.
- Repeat the layering process: sauce, noodles, remaining ricotta mixture, remaining vegetables, and remaining mozzarella.
- Top with remaining noodles, marinara sauce, and Parmesan cheese.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes until bubbly.
- Let cool for 10 minutes before slicing and serving.
Notes
For additional flavor, consider adding fresh herbs or your choice of vegetables.
