Sausage Tortellini Soup is a hearty and flavorful dish that combines Italian sausage, tortellini, and fresh vegetables in a rich broth.

- 1 pound Italian sausage (mild or spicy, depending on preference)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 bag (9 oz) fresh tortellini
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
- Olive oil, for cooking
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the Italian sausage to the pot. Cook until browned, breaking it apart with a wooden spoon as it cooks.
- Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
- Pour in the chicken broth and add the diced tomatoes (with their juice) to the pot. Stir to combine.
- Sprinkle in the Italian seasoning, along with salt and pepper to taste. Bring the mixture to a boil.
- Once boiling, add the tortellini to the pot. Reduce the heat and let it simmer for about 5-7 minutes, or until the tortellini are cooked through.
- Stir in the chopped spinach and let it wilt for about 2 minutes.
- Before serving, taste the soup and adjust the seasoning, if necessary.
- Ladle the soup into bowls. Top with grated Parmesan cheese, if desired.
