Hearty and Comforting Shepherd’s Pie Baked Potatoes combine the cozy flavors of classic shepherd’s pie with the convenience of baked potatoes. Each russet potato is stuffed with savory ground beef, vegetables, and topped with creamy mashed potatoes for a delicious, family-friendly comfort meal that’s easy to make and irresistibly satisfying.

  • 4 large russet potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • Salt, to taste
  • 1 pound (450g) ground beef
  • 1 small yellow onion, diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • ½ cup beef broth or vegetable broth
  • 1 teaspoon Worcestershire sauce (or soy sauce)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 cups mashed potatoes (fresh or leftover)
  • 2 tablespoons butter
  • ¼ cup milk (adjust as needed)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Rub potatoes with olive oil and sprinkle with salt. Bake 45–60 minutes until fork-tender. Cool slightly.
  2. Heat oil in a skillet. Add ground beef and cook until browned. Add onions and cook until soft, about 4–5 minutes.
  3. Stir in garlic, tomato paste, frozen vegetables, Worcestershire sauce, thyme, paprika, salt, and pepper. Pour in broth and simmer 5–7 minutes until thickened.
  4. Combine mashed potatoes with butter, milk, salt, and pepper until creamy and spreadable.
  5. Cut open each baked potato and fluff the inside with a fork. Spoon in the beef mixture, then top with mashed potatoes. Spread evenly.
  6. Return potatoes to the oven for 10–15 minutes, or broil 2–3 minutes until golden. Garnish and serve warm.
