- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup orange juice (freshly squeezed if possible)
- 1 cup fresh or frozen cranberries
- ¼ cup honey or maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Zest of 1 orange
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the orange juice, cranberries, honey, Dijon mustard, garlic powder, and orange zest. Stir well to combine.
- Allow the sauce to simmer for about 5-7 minutes, or until the cranberries begin to burst and the sauce thickens slightly.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and garnish with chopped parsley before serving.
