  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup orange juice (freshly squeezed if possible)
  • 1 cup fresh or frozen cranberries
  • ¼ cup honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Zest of 1 orange
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium and add the orange juice, cranberries, honey, Dijon mustard, garlic powder, and orange zest. Stir well to combine.
  5. Allow the sauce to simmer for about 5-7 minutes, or until the cranberries begin to burst and the sauce thickens slightly.
  6. Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  7. Remove from heat and garnish with chopped parsley before serving.
