Description

Smoky Tomato Halloumi Bake is a delicious dish featuring halloumi cheese and a rich tomato sauce.


Ingredients

  • 400g canned chopped tomatoes
  • 250g halloumi cheese, sliced
  • 2 medium onions, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they are soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and diced red bell pepper. Cook for an additional 3-4 minutes until peppers are tender.
  4. Pour in the canned chopped tomatoes, smoked paprika, dried oregano, salt, and pepper. Stir well to combine and let it simmer for about 5 minutes.
  5. Transfer the tomato mixture to a baking dish. Arrange the halloumi slices on top of the tomato mixture, overlapping slightly.
  6. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the halloumi is golden and bubbling.
  7. Once cooked, remove from the oven and garnish with fresh basil leaves before serving.
