- 4 slices Sourdough Bread (Fresh, thick-sliced (around ½ inch))
- 6 slices Mozzarella Cheese (Pat dry before using)
- 3 tablespoons Fresh Basil Pesto (Adjust to taste)
- 1/4 cup Sun-Dried Tomatoes (Optional)
- 2 slices Cooked Bacon (Optional; consider vegetarian alternatives)
- 2 tablespoons Butter (For grilling)
- 2 cups Tomato Soup (Comforting companion)
- 1 serving Light Salad (Fresh arugula salad drizzled with lemon)
Instructions
- Preheat the pan on medium-low heat.
- Butter one side of each slice of sourdough bread generously.
- Layer 3-4 slices of mozzarella on one slice of bread in the hot pan, butter side down.
- Spread a heaped tablespoon of basil pesto over the mozzarella, followed by the sun-dried tomatoes and cooked bacon if using.
- Top this with another layer of mozzarella.
- Add the second slice of sourdough on top, butter side up, and gently press down.
- Cook until the bottom is golden brown and the cheese begins to melt, about 3-4 minutes.
- Carefully flip the sandwich when ready, using a spatula.
- Continue to cook the other side until it’s crispy and the cheese is thoroughly melted, another 3-4 minutes.
- Remove from heat and let it rest for a minute before serving warm.
