Ingredients

  • 4 slices Sourdough Bread (Fresh, thick-sliced (around ½ inch))
  • 6 slices Mozzarella Cheese (Pat dry before using)
  • 3 tablespoons Fresh Basil Pesto (Adjust to taste)
  • 1/4 cup Sun-Dried Tomatoes (Optional)
  • 2 slices Cooked Bacon (Optional; consider vegetarian alternatives)
  • 2 tablespoons Butter (For grilling)
  • 2 cups Tomato Soup (Comforting companion)
  • 1 serving Light Salad (Fresh arugula salad drizzled with lemon)

Instructions

  1. Preheat the pan on medium-low heat.
  2. Butter one side of each slice of sourdough bread generously.
  3. Layer 3-4 slices of mozzarella on one slice of bread in the hot pan, butter side down.
  4. Spread a heaped tablespoon of basil pesto over the mozzarella, followed by the sun-dried tomatoes and cooked bacon if using.
  5. Top this with another layer of mozzarella.
  6. Add the second slice of sourdough on top, butter side up, and gently press down.
  7. Cook until the bottom is golden brown and the cheese begins to melt, about 3-4 minutes.
  8. Carefully flip the sandwich when ready, using a spatula.
  9. Continue to cook the other side until it’s crispy and the cheese is thoroughly melted, another 3-4 minutes.
  10. Remove from heat and let it rest for a minute before serving warm.
