- 1 cup fresh spinach, chopped
- ½ cup artichoke hearts, canned or jarred, drained and chopped
- ½ cup cream cheese, softened
- ¼ cup Parmesan cheese, grated
- 1 clove garlic, minced
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- Salt and pepper to taste
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine spinach, artichoke hearts, cream cheese, Parmesan, garlic, basil, oregano, salt, and pepper.
- Cut a pocket into each chicken breast and fill with the spinach mixture.
- Season the outside of each chicken breast with salt, pepper, paprika, garlic powder, and onion powder.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3 to 4 minutes on each side.
- Transfer the skillet to the oven and bake for 15 to 20 minutes until the chicken reaches 165°F (74°C).
- Remove from the oven, let rest, remove toothpicks, and serve hot.
Notes
- This dish pairs well with a side salad.
- You can use frozen spinach, just make sure to thaw and drain it well before using.
- Feel free to add more herbs or spices to suit your taste.
