Description

Ingredients

  • 1 cup fresh blueberries
  • 3 large eggs
  • ½ cup rolled oats
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk eggs, cottage cheese, honey or maple syrup, and vanilla extract until well combined.
  3. In a separate bowl, mix rolled oats, ground cinnamon, and salt.
  4. Gently fold the dry mixture into the wet until just combined. Carefully fold in blueberries, ensuring they are evenly distributed.
  5. Pour batter into the prepared dish. Bake for 35-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  6. Remove from oven and let cool on a wire rack for at least 15-20 minutes before slicing and serving. This allows the bake to set properly.
