- 2 cups cottage cheese
- 1 cup fresh blueberries
- 3 large eggs
- ½ cup rolled oats
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, whisk eggs, cottage cheese, honey or maple syrup, and vanilla extract until well combined.
- In a separate bowl, mix rolled oats, ground cinnamon, and salt.
- Gently fold the dry mixture into the wet until just combined. Carefully fold in blueberries, ensuring they are evenly distributed.
- Pour batter into the prepared dish. Bake for 35-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Remove from oven and let cool on a wire rack for at least 15-20 minutes before slicing and serving. This allows the bake to set properly.
