Sun-Dried Tomato, Spinach, and Ricotta Grilled Cheese is a delicious and satisfying dish.

- 4 slices of sourdough bread
- 1 cup ricotta cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: Fresh basil leaves for garnish
Instructions
- In a medium bowl, combine the ricotta cheese, chopped sun-dried tomatoes, chopped spinach, and mozzarella cheese. Mix well until all ingredients are evenly distributed. Season with salt and pepper to taste.
- In a large skillet, heat one tablespoon of olive oil over medium heat.
- Take two slices of sourdough bread. Spread half of the ricotta filling evenly on one slice. Top with the second slice of bread. Repeat with the remaining ingredients to form a second sandwich.
- Place the sandwiches in the heated skillet. Cook for about 3-4 minutes or until the bread is golden brown.
- Carefully flip the sandwiches using a spatula. Add the remaining olive oil around the edges of the bread if needed. Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
- Once both sides are golden and the cheese is gooey, remove the sandwiches from the skillet. Allow them to cool for a minute before slicing in half.
- If desired, add fresh basil leaves for an added touch of flavor and presentation.
