- 130 g all-purpose flour
Instructions
- In a mixing bowl, add the mashed sweet potato and all-purpose flour. Stir until everything is well combined; use your hands to form a dough ball that’s not too sticky.
- Separate the dough ball into 5 equal parts. Dust your working surface with flour, then roll each portion into a tortilla about 1/2 cm thick using a rolling pin.
- Heat a pan over medium-high heat. Place each tortilla in the pan and cook for 1 minute on each side until lightly golden, stacking them on a plate covered with a clean kitchen towel.
