Ingredients
Scale
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon sugar (optional)
- 1 package (9 oz) refrigerated cheese tortellini
- 1 cup fresh basil leaves, chopped
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the vegetable or chicken broth, followed by the crushed tomatoes and diced tomatoes (with their juice).
- Add the dried oregano and sugar (if using). Stir to combine, then bring to a boil.
- Once the soup reaches a boil, add the cheese tortellini. Reduce heat and let simmer according to the package instructions, usually about 5-7 minutes.
- Remove the pot from the heat. Stir in the fresh basil and season the soup with salt and pepper to taste.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese, if desired.
Notes
- Use fresh basil for the best flavor.
- Adjust soup thickness by pureeing a portion if desired.
- Add red pepper flakes or cayenne pepper for a spicy kick.
- Incorporate seasonal vegetables like zucchini or spinach.
- Experiment with different broths for unique flavors.
- Simmer longer to allow flavors to meld, but monitor tortellini to prevent overcooking.
- For a creamy version, add heavy cream or mascarpone cheese.
- Add cooked chicken or Italian sausage for a heartier meal.
- Use vegan tortellini and vegetable broth for a vegan option.
- Add spinach or kale and pesto for an Italian twist.
- Include Kalamata olives and feta cheese for a Mediterranean flair.
