Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 1/2 tsp coconut extract
  • 1/2 tsp vanilla extract
  • 1/2 cup canned coconut milk
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup sweetened shredded coconut
  • For glaze: 1 cup powdered sugar
  • 1/2 cup canned coconut milk
  • 1/4 tsp coconut extract
  • 3/4 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F. Line a 9×5-inch loaf pan with parchment or grease well.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until pale and fluffy, about 2-3 minutes.
  4. Add eggs one at a time, mixing well after each addition. Incorporate coconut extract, vanilla extract, and coconut milk until smooth.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined.
  6. Fold in shredded coconut until evenly distributed.
  7. Pour batter into prepared pan and smooth the top. Bake for 60-70 minutes, or until a toothpick comes out clean.
  8. Cool in pan for 10-15 minutes, then lift out and cool completely on a wire rack.
  9. For glaze, whisk powdered sugar, coconut milk, coconut extract, and vanilla until smooth. Once loaf is cool, pour glaze over the top.
  10. Slice and serve.
