- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 eggs
- 1/2 tsp coconut extract
- 1/2 tsp vanilla extract
- 1/2 cup canned coconut milk
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1 tsp salt
- 1 cup sweetened shredded coconut
- For glaze: 1 cup powdered sugar
- 1/2 cup canned coconut milk
- 1/4 tsp coconut extract
- 3/4 tsp vanilla extract
Instructions
- Preheat the oven to 325°F. Line a 9×5-inch loaf pan with parchment or grease well.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar until pale and fluffy, about 2-3 minutes.
- Add eggs one at a time, mixing well after each addition. Incorporate coconut extract, vanilla extract, and coconut milk until smooth.
- Gradually add dry ingredients to wet mixture, mixing on low speed until just combined.
- Fold in shredded coconut until evenly distributed.
- Pour batter into prepared pan and smooth the top. Bake for 60-70 minutes, or until a toothpick comes out clean.
- Cool in pan for 10-15 minutes, then lift out and cool completely on a wire rack.
- For glaze, whisk powdered sugar, coconut milk, coconut extract, and vanilla until smooth. Once loaf is cool, pour glaze over the top.
- Slice and serve.
