- 2 cups whole milk, room temperature
- 1 ½ cups mild cheddar cheese, shredded

- ¼ cup parmesan cheese, grated
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Peel and slice the potatoes into ¼-inch rounds. Thinly slice the onion into rings.
- In a medium saucepan, melt the butter over medium heat. Whisk in the flour, salt, black pepper, garlic powder, and paprika, stirring for about 1 minute.
- Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-4 minutes.
- Remove from heat and stir in 1 cup of shredded cheddar cheese until melted and smooth.
- Arrange half the sliced potatoes in an even layer in the prepared baking dish. Top with half of the sliced onions.
- Pour half of the cheese sauce over the potatoes and onions.
- Repeat with another layer of potatoes, onions, and the remaining cheese sauce.
- Sprinkle the top with the remaining ½ cup of cheddar cheese and ¼ cup of parmesan cheese.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for another 20-25 minutes until the top is golden and bubbly.
